The most expensive caviar in the world
The caviar, also known as black caviar, are a culinary treat, a delicacy and a dish associated with luxury and wealth.
What is caviar?
Caviar is a dish made from the fish roe (eggs) of the female sturgeon caught in the Caspian and Black Seas. Sturgeon eggs are really precious.
Types of caviar
Usually, in order to evaluate the caviar, the firmness, size and uniformity of the fish eggs are taken into account in order to differentiate the expensive caviar from the cheapest one. Depending on the origin of the fish, the caviar is Beluga (the rarest and most expensive caviar), Ossetra (the most popular caviar in the world) or Sevruga (the most accessible and common variety of caviar).
Sevruga Caviar, + $9,000
The Sevruga sturgeon is native to the Aegean, Caspian, and Black Sea and can grow up to 220cm in length and can weigh over 80 kg. Although, on average, it weighs around 40 to 50 kg. The Sevruga, like many of the other sturgeons, is also critically endangered, which make its illegal catch to be severely punished.

Most of the roe coming from Sevruga is from the farms while fewer and fewer people are trying to catch them in their natural habitat. For 30-50 grams of Sevruga caviar you will pay around $9000 or more. The caviar is small in size, but because of its salty and buttery aroma, is considered to be the tastiest caviar in the world.

Almas Caviar, $25,000
This caviar is made from beluga sturgeon from Iran and is very expensive because it comes from a species of white beluga that lives in the southern part of the Caspian Sea. Fish eggs come from specimens that are between 60 and 100 years old.

Experts say that this fish gives the caviar a spongy, soft, aromatic texture that gives an elegant and sophisticated note to this roe. Of course, the high price of these caviar is also justified by the fact that this species of fish is also endangered.
White Strottarga Caviar, $100,000
Strottarga Bianco caviar is the most expensive in the world. This type of caviar has a wonderful white gold color and is very difficult to obtain. This caviar comes from the Siberian albino sturgeon. Sturgeons are raised on a farm in Salzburg, Austria, and the process of creating caviar from these rare eggs is as unique as the main ingredient. Upon harvesting the eggs are dehydrated, then they are sprinkled with edible gold leaf which is 22 karat in purity.
